蛤蜊,煙臺人稱它為“蛤”(gǎ),長在淺海岸里,就像大地上的小草一樣廣袤。但它不會枯萎,不會發(fā)黃,也不用春風吹,只要有海水有泥沙,它就鮮活靚麗,生生不息。兩把可愛的小扇子粘合在一起,中間被充滿了氣,圓鼓鼓的,礁石色的扇面上印刻著水草似的花紋,遠看像花兒一樣,這美麗的蛤,被稱作“養(yǎng)馬島花蛤”,肥美清鮮,最受煙臺人喜歡。
養(yǎng)馬島,一座海上仙島,臥在神奇的北緯37度緯線上,還長著一粒四季豆的鮮綠模樣。崖上是蒼勁的松翠,崖下是綠瑩瑩的海水,終年接受風浪的洗禮。海草肥美,海水清澈,說不盡的旖旎。且不說,海參、扇貝、鮑魚、對蝦、牡蠣、天鵝蛋都喜歡依附著小島而生,單是那養(yǎng)馬島的海岸獨有的大花蛤就一窩一窩地潛在島前那一岸肥沃的黑泥沙里,每當大潮退去,任你挖個夠。
蛤的鮮,是一種無法形容的鮮,它的鮮就如同樣不起眼的膠東大白菜,鮮得樸實,鮮得清白、鮮得寡淡。它又有些像荷花,長在淤泥里卻出淤泥而不染,吐沙泥而自凈,渾身雪白。它個子不大,長相普通,不需要駕船遠行也不需要多大氣力,一年四季都能輕易地吃到。可以自己去趕海,也可以到市場上去,還可以在養(yǎng)馬島大橋的橋頭附近,那些圍著艷頭巾的漁婦剛從退潮的淤泥里挖出來,放在盆里、放進桶里賣。加入海水的蛤緩著沙噴著水,蛤身上靚麗的花紋像一個個藝術品,在水光里晶瑩著,絢爛著,散發(fā)著誘人的鮮亮。
買回去的蛤同樣放進水盆里,加少許的鹽,不多會兒,蛤就張開了嘴,伸出細長的舌頭,噴出一尺多高的水珠。此起彼伏,還“咯吱咯吱”地唱著歌兒。
緩凈了沙的蛤多半會炒著吃?!袄背锤颉本褪亲罱浀涞囊坏啦?,炒著簡單,吃著鮮美,最受煙臺人喜歡。夏天可用青椒炒,余時用干紅椒。有朋從內地來,一口海鮮不沾,嫌螃蟹太香、魚肉太膩、爬蝦吃著扎嘴巴。當用干紅辣椒、蔥姜蒜加生抽烹鍋后炒出來的殼淺色艷、鮮氣沁人、肥而不膩、易嚼還帶點艮勁兒的養(yǎng)馬島花蛤端在他面前時,他的筷子就放不下了,邊吃邊夸:好一個滑嫩清鮮的蛤。
古人詠蛤:“棲身未厭泥沙穩(wěn),爽口還充鼎俎鮮?!备叩鞍椎椭竞喾N礦物質和微量元素,營養(yǎng)極其豐富的小蛤蜊,無論蒸烤炒煮,怎么吃都鮮。蛤的鮮美尤其在于它的湯汁,所以煙臺人喜用清白的蛤湯、蛤肉與翠綠鮮嫩的蕓豆一起開面鹵,清極、淡極、鮮極,煙臺的手搟面也就負有了盛名。
仙島生鮮蛤,養(yǎng)馬島的蛤之所以鮮,就不足為怪了。
The clam, called Ga by Yantai locals, grows in the shallow sea in an expanse as wide as the grass in the land. However, it will not wither or yellow and does not need the spring breeze. It grows vibrant and beautiful constantly as long as there is sea water and sand. Like two lovely small fans stuck together full of air between them, it is round with a waterweed-like pattern on its rock-colored sector, looking like a flower when being looked from afar. The beautiful clam is called the “clam on Yangma Island.”Plump and delicious, it is the favorite of Yantai locals.
Yangma Island, an offshore fairy island situated on the magical 37th parallel north, is home to green beans. On the cliff are hardy pines and below the cliff is green sea water. It weathers the baptism of winds and waves all year long. The delicious sea weeds and limpid sea water reveal untold beauty. To say nothing of the sea cucumbers, scallops, abalones, prawns, oysters and Washington clams that like to grow by small islands, the clams typical of the coast of the Yangma Island hide in the fertile black sand in swarms in front of the island. When the sea ebbs, you can dig for it to your hearts content.
