Macaron is one of the most amazing pastries,with hundreds of flavors and fillings.It is a specialty in several cities and regions of France. The recipe and presentation can change from one place to another.Macaron is undoubtedly a food heritage.
The name macaron would be of Arab origin. The earliest known recipe can date back to the Renaissance (文藝復(fù)興).Ini?tially, a simple and popular biscuit appeared among the Italian nobles in 1500. It is believed that macaron crossed the French border in 1533 thanks to Catherine de' Medici, who became queen of France.From then macaron soon was popular among the other regions of France.
There were records that macaron appeared in 1581 at the marriage of Duke of Joyeuse in Ardèche. At Saint?Jean?de?Luz, it was known that it was offered to King Louis ⅩⅣon the occasion of his marriage to Maria Theresa.
When King Louis ⅩⅣdecided to live at Versailles in 1682, his chefs served maca?ron to the guests. Then macaron was forbidden to be sold and only served to royalty. This tradition continued during the following centuries until the fall of the empire in 1789.
In 1792, in Nancy, macaron was prepared by religious communities. And they began to commercialize macaron. Until then, macaron was a simple biscuit, crunchy (松脆的) on the outside and soft inside.It was in the 1830s that they had the idea of putting two macaron biscuits together and filling them with jellies or wine, and then with differentflavors of cream.In the early 20th century, Ladurée of Paris created the colorful macaron in its present form with a wide variety of colors and flavors. From that moment the pastry knows a new wave of success in the capital.
In 1993, pastry chef Fran?ois Payard offered this small biscuit to customers at the Daniel restaurant in New York. And of course, it's a success! So, macaron, considered one of the symbols of French sweets,gains an international fame.
