重慶火鍋,又稱毛肚火鍋或麻辣火鍋,系四大菜系之一的川菜系飲食,是中國傳統(tǒng)飲食方式之一。重慶火鍋起源于明末清初的重慶嘉陵江畔、朝天門等碼頭船工纖夫的粗放餐飲方式,其主要原料是毛肚、鴨腸、牛血或者鴨血等。
