涮羊肉Boiled mutton傳說(shuō)story起源于originate from元代。七百多年前,元世祖忽必烈統(tǒng)帥durbate大軍the army南下遠(yuǎn)征,經(jīng)過(guò)through多次戰(zhàn)斗fight,人困馬乏the soldiers and the horses are all tired,饑腸轆轆。忽必烈猛地想起remind of家鄉(xiāng)的菜肴the dish——清燉羊肉boiled mutton in clear soup。
于是吩咐tell部下troops underhis command殺羊kill the sheep燒火。正當(dāng)When伙夫宰羊割肉時(shí),探馬突然suddenly氣喘吁吁地panted飛奔進(jìn)帳,稟告敵軍the enemy大隊(duì)人馬追趕而來(lái)catch up,離此僅有only十里路。但饑餓hungry難忍的忽必烈一心等著wait for吃羊肉,他一面下令部隊(duì)開(kāi)拔,一面while喊著shout out::“羊肉,羊肉?!鼻鍩跹蛉猱?dāng)然是等不及了can't wait,可however生羊肉fresh mutton又不能端上來(lái)brought out讓主帥吃,怎么辦呢?這時(shí)At this time只見(jiàn)主帥the commander in chief大步向火灶走來(lái),廚師the cook知道know他性情暴躁irritable, 于是急中生智a good idea occurred to his mind at the crucial moment,飛快地quickly切了cut10多片薄肉,放在沸水boiling water里攪拌了幾下agitate,待肉色一變,馬上at once撈入碗中,撒上spread細(xì)鹽salt、蔥花 chopped green onion和姜末bruised ginger,雙手捧給了剛來(lái)到come灶旁的大帥。忽必烈抓起pick up肉片送進(jìn)口中,接連continuously幾碗之后,他揮手?jǐn)S碗throw about the bowl,翻身上馬mount his horse。英勇地heroically率軍迎敵,結(jié)果旗開(kāi)得勝as soon as he go into action he won the victory,生擒敵將capture the general of the enemy。
在籌辦Organize慶功酒宴a victory lunch時(shí),忽必烈特別點(diǎn)了book戰(zhàn)前吃的那道羊肉片。這回This time廚師精選了carefully choose優(yōu)質(zhì)high quality綿羊腿部的“大三叉”和“上腦”嫩肉fresh mutton,切成均勻的ymmetrical薄片,再配上add麻醬seasampaste腐乳fermented bean curd、辣椒chilli、韭菜花leek flower等多種佐料,涮后鮮嫩可口fresh and tasty,將帥們吃后贊不絕口be full of praise,忽必烈更是喜笑顏開(kāi)his face lit up with happiness。廚師忙上前go up說(shuō)道:“此菜尚無(wú)名稱name,請(qǐng)帥爺賜名grant a name。”忽必烈一邊涮著羊肉片,一邊笑著答道answer with smile;“我看就叫涮羊肉吧,眾位將軍以為如何what about?”從此After that,涮羊肉成了宮廷佳肴royal dish,直到光緒年間,涮羊肉才逐漸by degrees走向民間folk。
